These are great for a football game or a party appetizer. The recipe can be changed up and you can use chunks of chicken breast, scallops or even vegetables. Wrap it all up in bacon, bake, top with pimento cheese and bake a little longer to melt the cheese.
Tater Tots (thawed)
Palmetto Cheese – Original, Jalapeno, or Bacon
To begin, lay out a slice of bacon. Place a tater tot on one end of the bacon and wrap it to make one revolution. You want just enough bacon so it slightly overlaps itself. Slice bacon with a pairing knife and move on to the next tater tot. Once all of the tater tots are wrapped it’s time for the skewers. You’ll want to put the pointed end of the skewer through the bacon that overlaps so it seals itself together.
Place the skewers a baking sheet and bake for 15 minutes in a 400F oven.
After 15 minutes, take out the pan and spoon Palmetto Cheese over the tops of the tater tots. The closer all of the tater tots are together, the faster this process will go. Put the pan back into the oven for 5 minutes just to melt the cheese.
You should get 4 tater tots per slice of bacon and we put 4 tater tots on each skewer. You can use these numbers to gauge how many skewers you want to make. Would figure on 1-2 skewers per person if making for a party.
