Green Tomato and Bacon Palmetto Cheese Dip topped with crispy onions
Ingredients:
1-2 tubs Palmetto Cheese – The Pimento Cheese with Soul! (Original, Jalapeno or Bacon…we used Jalapeno to give it a little more kick!)
5 slices bacon, cut into small slices
1 cup green tomatoes, diced small
1/2 cup french fried onions (we used French’s)
Directions:
In a small saute pan, cook bacon until crispy. To the pan, add green tomatoes and cook on medium for five minutes. Drain off excess oil.
Add 1 – 2 tubs of Palmetto Cheese, depending on how large your container is, to a microwave safe dish. Make sure you have enough room to top with the tomato mixture.
Pour the tomato and bacon mixture on top of the pimento cheese. Add french fried onions as the top layer. Place in the microwave and cook on high for 2 minutes, or until the cheese has melted. Times may vary according to your microwave.
Serve with crackers or your favorite chips. We made a pimento cheese sandwich topped with bacon to go with ours. It made for a delicious lunch!!
