
This is a great recipe for taking to a party. You can make it mild or as hot as you like. If you want to make this milder in heat, do not add additional jalapenos. You can also use Original or Bacon Palmetto Cheese if you prefer. If you want it even spicier, add a little hot sauce.
Here’s what you’ll need:
2 Jalapenos
3 cups Potato Rounds (they’re like flat tater tots)
12 ounces Palmetto Cheese with Jalapenos
8 ounces Cream Cheese, softened
1/2 cup Cheddar, shredded
6 ounces Bacon, cooked and crumbled
Preheat oven to 375F
When working with jalapenos, put on some rubber gloves if you’ve got them. If not, make sure to wash your hands and your cutting surface thoroughly after working with them. By all means do not touch your face for any reason after working with a jalapeno. Now with our PSA out of the way, cut the jalapenos in half lengthwise and remove the seeds. Small dice one jalapeno and set aside. Cut the other into matchstick size pieces and reserve for the garnish.
In a mixing bowl, combine Palmetto Cheese and cream cheese and blend together. Mix in the crumbled bacon and the diced jalapeno.
In a 9″ x 9″ casserole dish, add 3 cups of Potato Rounds and spread evenly. Top with the cheese mixture and spread that evenly over the potato rounds. Sprinkle shredded cheddar over the mixture and make whatever pattern you like with the jalapeno matchsticks.
Bake at 375F for 25 minutes.
Serve with your favorite chip! We used Tostitos Scoops.
