12 oz Palmetto Cheese – Original, Jalapeno or Bacon
1 cup sharp grated Cheddar Cheese
8 oz. Cream Cheese
3/4 cup Craisin’s, chopped
1/2 chopped pecans
1 pkg Plastic eyes (we purchased at Michaels and they were originally used for decorating cupcakes)
1/2 Red Pepper
1 pkg Alfalfa Sprouts
In a mixing bowl, combine Palmetto Cheese, grated cheddar and cream cheese. Mix in 1/2 cup chopped Craisins into the cheese. Form a ball (make as big or small as you choose).
On a plate or dish combine the remaining chopped Craisins and pecans. Roll the ball in the mixture covering all sides. Transfer to a serving plate.
To transform your cheese ball into a monster, cut one end off of a cucumber. Cut that end in half and place in front to make the feet.
To make the mouth, cut a red pepper in half and remove the seeds. You can cut the mouth out with a pairing knife. Stick the eyes in the top of the cheese ball and lightly press the mouth into the cheese ball.
Tip: use a toothpick and draw your shape on the pepper before you cut. That way you have a line to follow. You can make the mouth whatever shape you like. There is no wrong way to do this step, so have fun!
We served our Monster Cheese Ball with plates and napkins purchased at Target, they’ve got a lot of fun items for each holiday. We also put pumpkin shaped pretzels in miniature cauldrons also purchased at Target.
