Butter the outsides of the bread extremely generously. Fill with Palmetto Cheese JALAPENO style! Put even more butter in a cast iron skillet and heat the butter til it’s bubblin’. Fry the sandwich until it’s very well done – nearly blackened. Best. Sandwich. Ever.

Love pimento cheese bacon on sour dough bread grilled up with butter :-) hmm

  35. I love to use slices of french bread with Palmetto Cheese with bacon and sliced tomatoes. Butter the bread good before you put it in the pan. Spray the pan before putting in the butter so it doesn’t burn quickly. Don’t cook at too high of heat, and it will be perfect. Just add a dill pickle on the side.

This PCGC only works in summer when the tomatoes are uberfabulous and right out of the ground:
thick slices of country white or sourdough
    jalapeno PC, crispy bacon strips
cover both outsides of bread with olive oil butter from Land O’ Lakes
spread layer of PC, add bacon and grill in cast iron pan with bacon press on top, both sides, then pull out the sandwich and add slices of garden tomatoes, sprinkled in seasalt and pepper (the cool of the tomatoes provides a little heat relief, and serve with plain potato chips and a little home brewed ice tea with a big slice of lemon.
