You only need a few items to prepare this dish and you can add whatever fillings you want. We used grilled chicken and tomatoes, but shrimp, beef or crabmeat would be delicious. You can also add chopped green onions, sliced olives, avocados or our favorite, bacon! Or all of the above, but it might have to be open faced if you do that.
Here’s what you’ll need:
10 inch Flour Tortilla (we used wheat)
2 Tbsp. Palmetto Cheese – Original, Jalapeno, or Bacon
4 ounces Chicken, grilled and chopped
Tomatoes, fresh, chopped
Pan spray or oil
On one half of the tortilla, spread Palmetto Cheese evenly. Top with diced chicken, tomatoes and whatever toppings you like.
Fold in half and place into a hot pan that has been sprayed with pan spray or coated with oil. Cook for a few minutes on each side on medium high heat. When both sides are browned and crispy, remove from the pan. Slice into thirds and serve.
We served our quesadillas with grilled vegetables and a tomato half topped with pimento cheese.
