
We made two full batches of these for a reception, one Palmetto Cheese Original and one Palmetto Cheese with Jalapenos. The next batch we’re going to try it with almonds instead of pecans. Would be GREAT to use Palmetto Cheese with Bacon and real bacon pieces on top, mmmm.
Ingredients:
1 cup flour
1 cup Palmetto Cheese – Original, Jalapeno or Bacon
1/4 cup butter or margarine
1/2 cup pecans, chopped fine
1/4 tsp salt
Sea Salt
Pecan pieces to garnish the tops
Using a stand up mixer, combine flour and Palmetto Cheese and mix on medium for 60 seconds. Add butter and mix on medium speed until blended. In a food processor, grind pecans fine. Add pecans and salt to the cheese mixture and mix until combined. Wrap in plastic wrap and refrigerate for 2 hours. Dough must be chilled to work with. Once chilled, roll dough out on a floured surface to 1/8″ thickness. With a round cookie cutter cut shapes into the dough. We used a 2″ cutter for the crackers shown. Remaining dough can be combined back together and rerolled. Place the cut dough onto a greased baking sheet. Parchment paper or a silicone liner can also be used and makes removal from the pan a much easier process.
Press a pecan half into the center of each cracker and sprinkle with sea salt before baking.
Bake at 400F for 12-15 minutes until golden brown. Enjoy!
What kind of flour do you use? All purpose or self-rising
Hi Sherri! We use All Purpose Flour and suggest using White Lily if you’ve got it at your grocery store.
