
Pimento Cheese topped cornbread muffins garnished with pimentos
Palmetto Cheese Cornbread Muffins
1 cup yellow cornmeal
1 cup flour
1 Tbsp sugar
1 tsp salt
1 Tbsp baking powder
2 eggs
1 cup milk
1/2 cup mayonnaise
1/2 tub Palmetto Cheese (12oz. tub)
Preheat oven to 425 degrees
In a mixing bowl combine dry ingredients. Add in eggs, milk and mayo and stir until all ingredients are combined. Let mixture sit for five minutes.
Muffins: Place muffin liners in muffin pans, fill 2/3 of the way full with the cornbread mixture and top with a spoonful of Palmetto Cheese. Bake approximately 20 minutes or until inserted toothpick comes out clean from the center. Baking time will vary depending upon the size of your muffin pans.
After the muffins have cooled, top with Palmetto Cheese and garnish of your choice. We used sliced green olives, but a dollop of pepper jelly or bacon crumbles would be tasty as well…or just eat them as they are!

Sorry about that, we have updated the recipe. After we filled the muffin cups, we topped each with a teaspoonful of Palmetto Cheese and then baked. After the muffins cooled down, spread Palmetto Cheese on top of each muffin. We garnished with a slice of olive, but you can eat them without PC on top or a garnish. Other garnish options are roasted peppers, pepper jelly or bacon crumbles.
