You’ve got several options with this recipe. You can use kosher baby dill, which are a finger food party size or you can use a larger kosher dill if you want to serve it as an appetizer. If you prefer something spicy, use a half of a jalapeno instead.
1 jar Kosher Baby Dills
Palmetto Cheese – Original, Jalapeno or Bacon
Pepper Jelly for dipping (optional)
Preheat oven to 400F
Slice the pickle in the half lengthwise. With a melon baller or small spoon, scoop out the seeds from the center of the pickle. Fill the pickle with 1-2 teaspoons of Palmetto Cheese or enough to fill the area that you scooped out. Wrap the cheese filled pickle with a slice of bacon. Make sure the bacon covers the cheese as much as possible.
Place the bacon wrapped pickles on a sheet pan with the cheese side up. Bake at 400F for 15 minutes. If you prefer the bacon a little crispier, leave them in the oven a little longer.
