Palmetto Shrimp Crostinis

Palmetto Cheese Shrimp1 Baguette or French Bread, 10-12 slices 1 inch thick
6 oz Palmetto Cheese with Jalapenos (Original or Bacon can also be used)
12 oz – 71-90 P&D Raw Shrimp
1/4 cup Red Pepper, small diced
1 Tbsp Olive Oil
1 Tbsp fresh Basil, chopped
1/4 cup Mozzarella Cheese or Parmesan Cheese

Preheat oven to 350F. Slice bread into 1 inch thick slices with a serrated knife.
On a sheet pan, line up slices of sliced bread and bake for 10 minutes. This will keep the bread from getting soggy later on. Set aside the pan after you pull it from the oven, but leave the bread on the pan.

In a saute pan, add olive oil and red peppers and saute for 5 minutes. Add the shrimp and basil and cook for approx. 7 more minutes or until the shrimp is fully cooked.
Palmetto Cheese Appetizers Shrimp

On a slice of bread, spread 1 Tablespoon of Palmetto Cheese. Top with the shrimp mixture and sprinkle the tops with Mozzarella or Parmesan Cheese. Bake in the oven for 5-7 minutes or until all cheese has melted.

These are great as an appetizer for dinner or served on a tray at a party. You can also substitute crab meat for the shrimp.
