Palmetto Cheese Stuffed Deviled Eggs

Palmetto Cheese Deviled Eggs

6 Tablespoons Palmetto Cheese, Original or Jalapeno
6 eggs, hard boiled
1/4 cup Mayonnaise salt and pepper to taste
Paprika

Directions:
Cut hard boiled eggs in half, remove yolks and place into a bowl. Place egg whites onto a serving dish. Mash yolks with a fork until fine. Add mayo and mix until incorporated. Add Palmetto Cheese and mix until thoroughly incorporated together. Scoop mixture into a pastry bag or gallon-size food storage bag with one small corner cut off. Pipe mixture onto egg whites. Garnish with a little southern sprinkle of paprika. Variations: Add finely chopped olives, jalapenos or bacon to give your eggs an added flavor.

Savory Palmetto Cheese Cupcakes
1 cup yellow cornmeal
1 cup flour
1 Tbsp sugar
1 tsp salt
1 Tbsp baking powder
2 eggs
1 cup milk
1/2 cup mayonnaise
1/2 tub Palmetto Cheese (12oz. tub)

Preheat oven to 425 degrees
In a mixing bowl combine dry ingredients. Add in eggs, milk and mayo and stir until all ingredients are combined. Let mixture sit for five minutes.

Muffins: Place muffin liners in muffin pans, fill 2/3 of the way full with the cornbread mixture. Bake approximately 20 minutes or until inserted toothpick comes out clean from the center. Baking time will vary depending upon the size of your muffin pans.
