This is one of those recipes that is easy to put together and makes a great dip for parties. Makes enough to serve 8-10 people so one recipe should do you for a dinner party. If your not into any spice, simply use Original Palmetto Cheese instead of Jalapeno. On the other hand if you desire more heat, add some finely diced jalapenos.
Southern Cowboy Caviar
1 tub Jalapeno Palmetto Cheese – The Pimento Cheese with Soul!
1 – 15 oz. can corn, drained
1 -15 oz. can black eyed peas, drained
1 bunch green onions sliced (about 1 cup)
1/2 red or green pepper diced small
2 avacados, diced
1 tomato, diced small
1 tsp salt
pepper to taste
Mix all ingredients together in a bowl until thoroughly combined and serve with tortilla chips or bagel chips. We garnished ours with a sprig of cilantro and small diced red peper.
