Taco Tater Tot Casserole using Palmetto Cheese

Taco Tater Tot Casserole using Palmetto CheeseIngredients:
1 pound – Ground Beef
1 medium Green Pepper, diced
1 bunch Green Onions, chopped
1 pkg Taco Seasoning
1/2 Cup Water
16 oz Salsa
10 oz can Ro Tel Diced Tomatoes with Chilies (mild)
12 oz Palmetto Cheese – Original, Jalapeno, or Bacon
16 oz Tater Tots, brand of your choice

Garnish (optional):
Green Onions
Black Olives, sliced
Sour Cream

Preheat oven to 400F
We prepared everything in our dutch oven, but you can also use a casserole dish.
Cook the ground beef with the diced green peppers and 1/2 of the chopped green onions. Set aside the other half for garnishing. Once the beef is browned, drain off the fat.
Taco Tater Tot Casserole using Palmetto Cheese

Add taco seasoning, water, salsa and diced tomatoes and simmer for 5 minutes.
Remove from heat and spoon Palmetto Cheese on top of the meat mixture. If you’re using a casserole dish, pour the mixture into the dish and then top with Palmetto Cheese.

Now top with tater tots until the top is completely covered.

Bake in a 400F oven for 30 minutes. Garnish with green onions, black olives and serve with sour cream if you desire.
